For those who don't know this Bahia delicacy, we can say that the codfish frying pan is very similar to the traditional codfish recipe, because it is prepared with the same ingredients, however it also includes coconut milk and beaten egg.

The cod frying pan is a very practical recipe because it is prepared in the pan that is then placed in the oven and on the table. This way you don't lose flavor and don't have as much dishes to wash! Let's go to the kitchen and prepare this Bahia cod recipe? Check out all the details below.

Ingredients for making Bahia cod frying pan:

 500 grams of salted cod

 500 grams of potato

 2 medium ripe tomatoes

 ½ red pepper

 ½ yellow or green pepper

 1 medium onion

 4 cloves of garlic

 6 eggs

 4 tablespoons of olive oil

 1 glass of coconut milk (200 ml)

 1 bunch of parsley or cilantro

 Black pepper

 salt

To decorate:

 ½ onion sliced

 ⅓ red pepper cut into strips

 ⅓ yellow or green peppers cut into strips

 ½ cup of olives

How to make Bahia cod frying pan:

Place the cod in a pan, cover with water and simmer for 10-15 minutes or until you notice the cod chips are separating. Remove the cod and reserve the cooking water.

Cod must be desalted 24 hours in advance, changing the water several times. If you have doubts, check out how to prepare cod correctly.

Wait for the cod to cool down a bit and clean it of skin and pimples. Crumble into small pieces and set aside.

Tip: Clean and shred the cod while it's still hot, this task will get more difficult as it cools down.

Prepare the vegetables for this cod recipe for Easter: peel and cut the potatoes into cubes. Also chop the onion, tomatoes and peppers or cut these vegetables into slices. Chop the garlic cloves and the parsley or cilantro.

Place over medium heat a large skillet with oil, garlic and onions. Let it cook until it starts to brown and add the potatoes, tomatoes, peppers and parsley. Saute for 1-2 minutes, add a little of the cod cooking water and let it boil until the potatoes are tender.

After the previous step, add the cod, stir, add the coconut milk and stir again. Taste, add salt and pepper to taste and simmer for 5 minutes until dry. Turn off the heat and let cool.

Turn the oven on at 200ÂșC. Separate the whites from the yolks and beat the whites in snow until firm. Add the gems one by one and keep beating. The result should be a very light and airy mixture. Separate a third of this mixture and place it in the cod and vegetables preparation, gently wrapping it so as not to lose air.

Tip: Sift egg yolks to avoid the egg smell and taste.

Cover the cod pan with the rest of the beaten egg mixture and add the onion, peppers and olives to decorate. Drizzle with the drizzle of olive oil and bake at 200°C for 20 minutes or until golden.
